The Frugal Gourmet classes in Barriere are off to a good start.

Like any good meal... the class started with salads.  Those who attended learned how to make three different salads, including a pickled watermelon and endive salad.

Did you know that you can easily pickle watermelon?

Instead of dumping the leftover liquid from your emptied bottle of pickles, keep the juice - cut up bite sized pieces of watermelon (and you can include the white part of the rind), and put it in the bottle and let it sit overnight or longer.  Instant pickled watermelon that adds a unique flavour and crunch to your salad.

Register for the next session by dropping by the Yellowhead Community Services office in Barriere, at the Ridge.

The next session will be on April 13, when we will be learning how to make stuffed cornish hen.
